On those chilly fall and winter days, a hearty bowl of soup or one pot chili is the perfect meal to cozy up with in front of the roaring fireplace. What’s even better is that there’s nothing simpler than a one pot dinner. There’s minimal prep involved, no complicated recipe steps to follow, and only one pan to wash when you’re done.

One Pot Vegetarian Chili
- Cooking spoon (wooden or plastic)
- Chopping knife
- Cutting board
- Measuring spoons
- Measuring cups
- 1 tbsp olive oil
- 3 tbsp garlic, minced
- 1 cup onion, diced
- 4 cups spinach
- 1 cup English peas
- 1 cup carrots, sliced
- 1 cup white beans
- 3 cups zucchini, sliced in quarters
- 28 oz fire roasted tomatoes
- 4 cups vegetable broth
- 2 bay leaves
- Sauté oil, garlic, onion and carrots until tender.
- Add tomatoes and vegetable broth to mixture and simmer.
- Add remaining ingredients including 2 bay leaves.
- Simmer for 20 minutes.
- Enjoy your chili!
